Okay, so I’ve been on this huge corn on the cob kick lately. It’s summer, it’s sweet, it’s delicious – what’s not to love? But eating the same thing over and over gets boring, right? So, I started experimenting with what to serve with my corn.
My Corn-Pairing Adventure

- The Unexpected Champion: This is where it got interesting. I had some leftover watermelon in the fridge. I cubed it up, added a little feta cheese and a tiny bit of mint. On a whim, I put it next to the corn. And… wow! The juicy, sweet watermelon, the salty feta, the cool mint… it was the PERFECT complement to the corn. Seriously, try it.
So, after all that, I’ve got a few go-to pairings now. Burgers are always a solid choice, spicy shrimp is a close second, but the watermelon-feta-mint thing? That’s my new summer staple.
