Okay, so I’ve been seeing “Nantucket” this and “Nantucket” that all over my Pinterest feed, especially when it comes to cod recipes. I figured, why not give it a shot? I love cod, and this looked pretty straightforward. Here’s how my attempt at making Nantucket cod went down.
Getting Started
First, I grabbed my ingredients. I already had most of the stuff, which was a bonus. I needed:
- Cod fillets (duh!)
- Some butter
- Breadcrumbs (I used panko because I like the crunch)
- Grated Parmesan cheese
- A little bit of mayo
- Lemon juice
- Salt and Pepper
Prepping the Fish
I took the cod fillets out of the fridge and patted them dry with paper towels. Gotta get rid of that extra moisture, you know? Then, I sprinkled some salt and pepper on both sides. Simple enough.
Making the Topping
This is where the “Nantucket” part comes in, I guess. In a bowl, I mixed together the breadcrumbs, Parmesan cheese, and a few tablespoons of melted butter. I stirred in a tiny dollop of mayo . After that, I squeezed some lemon juice on there, too. I just mixed it all up until it looked kinda like wet sand. I add a pinch of salt and pepper to make it good.
Putting It All Together
I laid the cod fillets in a baking dish that I’d greased with a little butter. Then, I spooned the breadcrumb mixture on top of each fillet, pressing it down gently so it would stick. I used all the topping mix.
Baking Time!
My oven was already preheated to 400 degrees Fahrenheit. I popped the baking dish in and set the timer for about 15-20 minutes. I kept an eye on it, because you don’t want to overcook cod – it gets all dry and rubbery. Mine took close to 20 minutes to be ready.
The Final Result
When the cod was cooked through and the topping was golden brown and crispy, I took it out of the oven. It smelled amazing! I let it cool for a few minutes before serving.
Honestly, it turned out pretty good! The cod was flaky and moist, and the topping added a nice crunch and flavor. It wasn’t super fancy, but it was definitely tasty and easy to make.
