So, I’m a huge fan of roast beef sandwiches. I mean, who isn’t, right? But I’ve always been kind of basic with my cheese choices. Usually, I just slap some cheddar on there and call it a day. But the other day, I was thinking, “There’s gotta be more to life than just cheddar!”
I started experimenting. First, I grabbed some Swiss cheese from my fridge. It was okay, you know? I tried to melt it in a pan, and it worked pretty well. The nutty flavor was there, but it wasn’t anything to write home about. It just didn’t blow me away with the roast beef, to be honest.
Then, I remembered someone once told me about provolone being good on sandwiches. So, I went out and bought some. I made myself another roast beef sandwich, this time with the provolone. I gotta say, this was a step up! It was smooth, kind of mild, but in a good way. It didn’t compete with the roast beef, but it also wasn’t boring like the Swiss. I even tried melting it, and oh boy, it got all gooey and delicious. I think I was onto something here.

- Provolone: A definite improvement! Melts great, good flavor.
But I didn’t stop there. I had some gouda lying around. I don’t even remember why I had it, to be honest. Anyway, I threw that on a sandwich too. And, well, it was different. It had a stronger flavor than the provolone, a little more… complex, I guess? It was good, but I’m not sure it was my favorite with the roast beef. Maybe it would be better with something else.
My Personal Ranking:
After all that, if I had to rank them, I’d say provolone is my top pick for roast beef. Then maybe gouda if I’m feeling fancy, and Swiss is last. I guess I’ll keep cheddar around too, because it’s a classic for a reason. Still I think there are some other things that I haven’t tried yet, and maybe they will surprise me.
Oh, and a little side note – I also tried some different additions to my sandwich. Some horseradish sauce was amazing! It really kicked it up a notch. I also tried some strong English mustard, which was pretty good too. Roast potatoes and buttered carrots are also good choices to make the roast beef more delicious!
